Pumpkin & Egg White Toast

INGREDIENTS

1 slice GF Bread - I have used country life

15g Avocado

15g Spinach, lightly cooked

60g Butternut Pumpkin, cooked

150g Egg whites


Method

  1. Cook egg whites

  2. Cook Bread

  3. Spread avocado on toast, top with cooked spinach

  4. Add pumpkin, smash if desired

  5. Top with egg whites

  6. Garnish with salt, pepper and smoked paprika

Can swap GF bread for normal bread, use whole eggs instead of egg white if desired
