White Chocolate Biscoff Blondies

Makes 8


INGREDIENTS

40g white chocolate

1 egg

30g Peanut Butter

65g Gluten Free Plain Flour

15ml Sugar Free Maple Syrup

125ml Almond Milk

20g Natvia Gold / sweetener of choice

1 tsp bi carb soda

Pinch of salt

2/ 15g Biscoff biscuits, crumbled

20g White Chocolate Baking chips

15g Biscoff spread, heated, to make runny consistency


METHOD

  1. Preheat oven to 175°C. Line a load tin with baking paper.

  2. Melt white chocolate in microwave in 20 second intervals. Allow to cool slightly.

  3. Once slightly cooled whisk in egg, peanut butter and maple syrup

  4. In a separate bowl sift together flour, protein powder, bi-carb soda, sweetener and salt

  5. Combine wet and dry ingredients together

  6. Slowly add almond milk (you may require more or less depending on protein and flour used)

  7. Once a batter is formed, stir in white choc chips

  8. Pour batter into prepared baking tin

  9. Crumble biscuit pieces over the top and add biscoff spread.

  10. Swirl through of desired

  11. Bake for 15-18 minutes

  12. Allow to cool for approx 10 minutes before slicing

  13. Slice into 8 pieces

  14. Enjoy cold or warm - heat for 20 seconds
