TRIPLE CHOC PROTEIN COOKIES

MAKES: 8

INGREDIENTS

150g Chickpeas, drained

65ml unsweetened almond milk **

30g nut butter (I used a combination of almond and peanut butter)

35g Muscle Nation Chocolate Plant protein from Supps42

7g granulated sweetener or choice (I used stivea)

10ml Sugar free maple syrup

2tsp Vanilla essence

20-25g buckwheat flour*

30g chocolate, chopped (I used a combination of noshu sugar free baking chips, in white and milk chocolate)


METHOD

  1. Using a blender or food processor blend chickpeas until smooth, add milk if wont blend together. You want this smooth

  2. Pour out chickpeas into a bowl and combine all ingredients, except chocolate.

  3. Fold in chocolate

  4. Allow mix to sit for approx 10 minutes, on the bench is fine.

  5. Divide into 8 balls, round them softly, not pushing them together too much, you just want to bind them

  6. Place onto a tray with baking paper

  7. Bake in preheated oven of 170°C for 8-10 minutes

  8. Pull out just before they are ready, as they will continue to cook while they cool

  9. Allow to cool for 5 minutes, they will firm up abit during this time

  10. Enjoy

Store in an air tight container if you can resist eating the whole lot for up to 7 days.

Reheat in microwave for 10-15 seconds if preferred warm.


*Buckwheat flour can be substituted for any other flour, buckwheat has a nutty flavour so complements this combo nicely. Liquid may need to be adjusted


**Almond milk can be substituted for other milk, add slowly as different flours and proteins will absorb different, you are wanting a runny paste like consistency, little bit thinner then a cake batter


This recipe is made for plant proteins, if a whey is used, flour quantity will need to be adjusted.
